King Day is a federal holiday. As such, you should please consider tipping service workers at the same time-and-a-half rate that you would expect for working a holiday.
For example, a standard 20% tip would be 30% if you were to follow this suggestion.
Martin Luther King died working to bring fair wages and decent conditions to striking sanitation workers in Memphis, Tennessee. King died fighting for economic fair play.
It would be consistent with the purpose of Martin Luther King's efforts to treat working people respectfully every day, and to also make extra acknowledgment of working people on King Day.
The work of freedom is up to each of us.
